    Herve is French and received his Hotel School Degree at Catering School of Chamalières (France). As a member of French Barman Association he was the holder of World record in Guiness book 1996 for most cocktails made in one hour (2,210 glasses).

    In 1987 Herve started his career at the young age of twenty in various bars in France, Corsica and Luxembourg.

    In 1990 he joined the Cruise Ship Mermoz, Croisieres Paquet (Accor) as Bar Manager (he was travelling all around the world in 3 years, visiting 86 countries in Europe, South America, America, Africa, Asia and Middle East).

    He first visited Vietnam in August 1998. The love of this charming country of its beautiful culture and people that made Herve promised to himself that he will come back to Vietnam for working and maybe living….

    In 2000, he was part of the opening team for the last Sofitel Hôtel, Sofitel La Défense Grande Arche, in Paris, France.

    In 2003 Herve has been called to Hotel Sofitel New York, as Food and Beverage Manager. Actually he did not want to go there, and said to Accor Worldwide

    “I don’t want to go to New York City I want to go to Ho Chi Minh City…”

    The answer of Accor looked like a song

    His dream came true when Herve Beal was called to Hotel Sofitel Plaza Saigon taking over the post as Food and Beverage during the last 5 years.

    So this is the story of the French guy who had to go through New-York to be placed in Saigon, and know thanks New-York City by establishing the first Steakhouse with New-York ambiance and style.
